"Though she be but little, she is fierce": The Story Behind immaculate®
Rewind a few years: supermarket shelves were full of sugary “mocktails” and half‑hearted 0 % lagers, but nothing that really captured the ritual of a premium G&T. That gap is exactly where immaculate® started: an all‑natural, alcohol‑free G&T that lets you keep the full flavour and fizz, whilst skipping the fuzz and fog.
Co-Founders – Our Values and Vision
Co‑founders Lynne, Gaynor, Carolyn, Bronwen and Sophie – yup, an all-women founding team! - bring different skills and experiences to our small but perfectly formed team. But we all quickly agreed on the key principles that lie at the heart of immaculate:

- Kinder choice - a business that balances profit with purpose, supporting local suppliers, sustainability, and charitable causes close to our hearts
From Kitchen Bench to Bar Shelf
It started on Lynne’s kitchen countertop – lots of teeny-tiny test batches, blind‑tasted by friends, family, bartenders, and Lynne’s partner (the fiercest critic). The winning profile paired juniper, lemon balm and a secret all-natural ingredient to add even more depth (to help give the mouth-feel similar to alcohol), topped with super-fizzy Scottish tonic water for signature sparkle.
Once the flavour profile was finessed, we scaled-up the recipe for larger-scale production, and believe us, that wasn't easy! Juniper is lovely, but WOW is it pesky to work with. But we got there - despite two expensive failed production runs. However, failure is all part of the process and we were finally super-pleased with the product - it tasted exactly as we had visualised right at the start.
At the same time, with our partners, we built the crucial brand identity and protection. Lowercase immaculate for humility, a clean white can for purity, soft ripple graphics for calm and freshness. Think fashion‑house minimalism - not full-on fizzy‑drink vibes. Sophisticated, pure, premium.
Hurdles We Hopped
Well...not exactly sure we hopped over them...but we did get over them in the end!
1. Flavour Depth – Alcohol carries flavour. Having no alcohol involved in the distillation process to make the botanical base meant re‑engineering a botanical recipe. Months of tweaks and understanding complex chemistry finally nailed a lingering finish we all loved.
2. Supply‑Chain Scruples – Recyclable aluminium cans, sourcing premium botanicals, natural distillers and high-quality natural sweeteners – it all stretches lead‑times (and patience). Worth every single delay and every single penny though.
3. Perception Shift – Early on we heard “Isn’t it just fancy flavoured water?” Cue sampling tours, customer research…and rave reviews that turned sceptics into fans.
A Zebra, Not a Unicorn
We proudly call ourselves a zebra company, balancing profit and purpose, growing sustainably, and moving in herds - hand in hand with our community. We measure success by impact as much as income.
Looking Ahead
In the words of William Shakespeare "Though she be but little, she is fierce", whilst right now we are a small team, we are (fiercely!) committed and ambitious! Not for growth and scale at any cost - no, no, no, absolutely not - but confidently and steadily at a pace and in a style that aligns with our values and purpose.
