Let’s take a look behind the scenes - or rather, behind the botanicals - to explore the ingredients that make immaculate® sing.

Juniper: The Classic Signature

The unmistakable star of any true G&T, juniper is what gives the drink its piney, slightly resinous kick. We use premium juniper with deep Scottish heritage - literally - as native juniper bushes grow wild in the Highlands (rare nowadays but Scotland used to be covered with native juniper forests). Juniper isn’t just a flavour though, it’s a symbol of clarity, freshness and strength. Botanically a cone, but known as a berry, it's the anchor of any G&T - alcohol-free or alcoholic.  

Quinine: The Bitter Balancer

Extracted from the bark of the cinchona tree, quinine changed history by treating malaria across the British Empire. But for us, it brings something else: bite. It’s that dry, bitter note that cuts through the sweetness and rounds out the profile of a classic G&T. In an alcohol-free serve, this is vital - it keeps the drink adult, balanced and satisfying. Without quinine, it just wouldn’t be right.

Lemon Balm: The Soft Touch

Gentle but never boring, lemon balm is a member of the mint family with a delicate citrus aroma. Traditionally used to calm nerves, ease digestion and soothe stress, it’s an essential part of our blend. Think of it as the botanical that bridges the depth of juniper with the bitterness of quinine, rounding out the drink and adding herbal complexity.

Lemon: The Zesty Finish

Bright, crisp and full of zing - lemon brings that familiar citrus lift that finishes the immaculate® experience. We chose lemon not just for its classic pairing with gin, but for its ability to brighten the entire flavour profile. From the first aroma to the final sip, it adds clarity and sparkle.

What You’ll Taste

Expect a layered, grown-up flavour. The first sip has a bitter bite, thanks to the quinine, followed by a rising complexity - resinous juniper, softened by citrusy lemon balm, and brightened by that clean lemon twist. It’s crisp, refreshing and utterly immaculate.

We didn’t just throw together a few botanicals and hope for the best! Our flavour developer and master distiller spent months working with our team to refine the flavour. We wanted something that would echo the ritual and reward of a classic G&T, but with no alcohol, no compromises...and absolutely nothing artificial.
