Replicating the grown-up experience of a classic G&T without alcohol is no easy feat. It’s not about de-alcoholising an alcohol product or removing something else, instead it’s about reimagining the entire experience. At immaculate®, we set out to create something that captured the crisp, elevated ritual of a G&T, while being completely alcohol-free. Here's how we did it.

The challenge? Alcohol does a lot of heavy lifting in traditional drinks. It enhances flavour, adds mouthfeel, and acts as a preservative. Without it, most drinks fall flat — literally and figuratively. Many alcohol-free alternatives rely on sugar, syrups, or artificial flavours to try and fill the gap. But we wanted to go a different route: one that honoured nature, simplicity, and sophistication.

Enter the world of botanical alchemy!

Our blend begins with the heart of any great G&T — juniper. This piney, resinous botanical brings a familiar depth that instantly signals “grown-up drink.” We layer this with lemon balm for a soft, fresh brightness, quinine for bitterness and a touch of our secret ingredient (we can’t say too much, but it brings real complexity and depth to the mix).

But flavour is only part of the experience. The fizz had to be just right. We ran dozens of carbonation trials to find the perfect level of sparkle — enough to lift the botanicals without overwhelming the palate, and without resorting to sticky sweeteners. Our drinks really fizz up when poured, helping to keep it light and refreshing from the first sip to the last

Mouthfeel matters. Sound matters. The way immaculate® pours into a copa glass with a soft fizz — it’s all designed to feel like something special. A couple of cubes of ice (no more - too much ice dilutes the drink and dulls the flavour!)  and a simple wedge of lemon or lime is all it needs. 

What’s left is a drink that feels as good as it tastes: crisp and clean. A drink that doesn’t apologise for being alcohol-free — it celebrates it.
